How to Cook White Shrimp
Boiled white shrimp is simple and light. If possible, you can also prepare some condiments for dipping.
Ingredients
A suitable amount of white shrimp, an appropriate amount of scallions, ginger, and garlic, a suitable amount of salt, a suitable amount of cooking wine, and a suitable amount of cooking oil.
Steps

Ingredients
300 grams of white shrimp, 50 grams of pork, 10 grams of scallions, ginger, and garlic, an appropriate amount of peanut oil, 40 grams of starch, 200 grams of water, 50 grams of bean paste, 5 grams of soy sauce, vinegar, salt, monosodium glutamate, and cooking wine as needed.
Steps
1. Peel the shrimp, remove the intestinal sand line, rinse, drain, then coat with dry starch;
2. Heat a wok to about 60% hot, add the shrimp to set its shape slightly, then flip and fry until the skin is crispy, then remove;
3. Add the bean paste to the remaining oil in the wok and stir-fry until red oil appears, then add the diced pork and sliced ginger and garlic, stir-fry;
4. Then add a suitable amount of broth, the shrimp, soy sauce, cooking wine, and monosodium glutamate, braise until the sauce reduces;
5. Then add chopped scallions, drizzle with some vinegar, mix evenly, and serve.
Tips
No additional salt was added because of the bean paste and soy sauce.
Crispy Fried Small White Shrimp
Ingredients
Shrimp, ginger powder, chicken essence, salt.
Steps
1. Rinse the shrimp, remove any hairs, drain the water, add salt, ginger powder, and chicken essence, and stir;
2. Then add dry starch, mix evenly, and deep-fry in oil heated to around 100 degrees Celsius;
3. Fry until golden brown, remove, then increase the oil temperature to 150 degrees, and quickly fry the shrimp for 20 seconds before removing.
Tips
The second frying step is to make the shrimp crispier.
Dry-Fried White Shrimp
Ingredients
6 white shrimp, 2 cloves of garlic, an appropriate amount of shallots, chili peppers, green onions, coriander, white wine, butter, lemon, chili sauce, salt, black pepper.
Steps
1. Use scissors to cut open and remove the intestinal sand, rinse, then sprinkle with marinade and let stand for a moment;
2. Chop the garlic, shallots, chili peppers, green onions, and coriander, and slice the lemon;
3. Heat a small amount of oil in a wok, add the minced garlic, shallots, and chili peppers, and stir-fry until fragrant;
4. Then add the shrimp, shell-side down, cover the pan, and steam for half a minute, then pour in the white wine, remove the cooked shrimp and plate them;
5. Continue to add butter, lemon juice, and lemon slices to the sauce in the pan, add a little salt and water, and bring to a boil;
6. Then add chili sauce, sprinkle with chopped green onions, coriander, and black pepper, and drizzle over the shrimp.
Tips
Lemon, butter, and other seasonings can be replaced with others. Lemon helps to remove the fishy smell.
