Winter Melon Simmered with Dried Shrimp
Ingredients:
winter melon, dried shrimp, salt, oil, vinegar, garlic, ginger.
Steps:
1. Peel and remove the seeds from the winter melon, wash it, and slice it thinly.
2. Wash the garlic and chop it into minced pieces; wash the ginger and slice it.
3. Heat oil in a pan, then add the winter melon and stir-fry evenly for about two minutes.
4. Add water (to your liking) and cover the pot. Bring to a boil over high heat, then reduce the heat to low and simmer for about five minutes.
5. Add the minced garlic and ginger slices and continue simmering.
6. Add salt to taste, followed by the dried shrimp, and simmer for another five minutes before serving.
2. The dried shrimp can be fried beforehand, but they are prone to burning, so pay close attention to the temperature when frying.
3. Alternatively, substituting the dried shrimp with preserved pork is also great. Fry the preserved pork first, then add the winter melon. This will make the broth even more fragrant and rich.

Ingredients:
winter melon, shrimp, scallions, Sichuan pepper, garlic, chicken bouillon, cooking wine, salt, starch.
Steps:
1. Peel and remove the seeds from the winter melon, wash it, and cut it into chunks.
2. Wash the scallions and chop them into scallion flowers; wash the garlic and chop it into minced pieces; wash the ginger and slice it.
3. Wash the shrimp and place them in a bowl. Add cooking wine, salt, chicken bouillon, and starch, then mix well by hand.
4. Blanch the winter melon in boiling water until it is three-quarters cooked.
5. When the oil is heated to 30% hot, add the shrimp and quickly stir-fry until they turn pink. Remove and set aside.
6. In a new pan, add Sichuan pepper and fry until fragrant. Remove the pepper, then add the scallion flowers and stir-fry the winter melon.
7. Add salt, chicken bouillon, and starch, then add the shrimp and continue stir-frying. After one minute, serve.

3. Fill a clay pot with cold water and add the pork ribs.
4. Bring to a boil over high heat, then reduce the heat to low and simmer for about an hour without adding water during this time.
5. Add the winter melon and continue simmering for approximately fifteen minutes.
6. Season the soup with an appropriate amount of salt, sprinkle with scallion flowers, and serve.
