Ingredients for Steamed Pork with Rice Flour
300 grams of pork belly with skin, 200 grams of sweet potatoes, 5 milliliters of vegetable oil, 60 grams of steamed pork rice flour, 5 grams of chopped Pixian broad bean paste, 10 milliliters of fermented tofu juice and half a piece of fermented tofu (4 grams), 1 gram of Sichuan pepper, 5 grams of minced ginger, 5 grams of minced scallion, 1 gram of white pepper
How to Make Steamed Pork with Rice Flour
1. Clean the pork belly with skin and slice it into pieces that are 4 centimeters wide and 0.3 centimeters thick. Peel the sweet potatoes and cut them into cubes about 3 centimeters in size.
2. Place the sliced pork in a bowl and add 5 milliliters of vegetable oil, Pixian broad bean paste, fermented tofu juice and half a piece of fermented tofu, Sichuan pepper, minced ginger, minced scallion, and white pepper. Finally, add a small amount of water or broth and the rice flour. Mix everything evenly and let it sit for 15 minutes.
3. Meanwhile, fill a steamer pot with enough water and bring it to a boil over high heat.
4. Line the bottom of the steamer basket with cooking parchment paper, then place the cubed sweet potatoes at the bottom of the basket. Arrange the seasoned pork slices on top of the sweet potatoes. This way, during steaming, the meat juices will mix with the sweet potatoes, infusing them with flavor. Place the steamer basket into the pot, being careful of the steam. Ensure the water in the pot does not evaporate completely while steaming.
5. Steam over medium heat for about 1 hour, until both the pork and sweet potatoes are tender. Remove the steamer basket and serve.
