Gamy fish, also known as yellow catfish, yellow bone fish, or colloquially referred to by dozens of names, is scientifically known as the yellow catfish. Recently, it has been commonly used in a dish called Stewed Tofu with Gamy Fish. The combination of tofu and fish, when stewed together for several boils, easily blends the freshness of the fish broth with the tofu.
Stewed Tofu with Gamy Fish
Ingredients Preparation
Green onion, white tofu (in moderation), ginger slices, gamy fish, white pepper powder.
Method Steps
1. Clean the gamy fish after slaughtering, drain the water. Cut the green onion and scallions into segments; slice the ginger.
2. Cut the tofu into small cubes and soak them in salted water for 5 minutes.
3. Place a pot over heat, once the oil is hot, add the gamy fish and fry until golden on both sides. Then add the green onion segments and ginger slices to release their aroma.
4. Pour in boiling water, add a little white pepper powder to remove the fishy smell, bring to a boil over high heat then reduce to low heat.
5. Cover and simmer for half an hour until the broth turns milky white, then add the drained tofu and simmer for another 5 minutes.
6. Season with salt, cook for about 8 more minutes, garnish with scallions before serving.
Home-Style Stewed Tofu with Gamy Fish

400 grams of gamy fish, 100 grams of white jade mushrooms, 400 grams of tofu, green onion and ginger (in moderation), wolfberries.
Method Steps
1. Prepare the gamy fish, white jade mushrooms, and tofu after washing them.
2. Heat oil in a wok, add ginger slices to fry the fish until both sides turn golden.
3. Place green onion, ginger, and white jade mushrooms at the bottom of a clay pot, then add the gamy fish.
4. Add cooking wine, simmer over low heat for 15 minutes, then add the tofu and cook for another 10 minutes.
5. Garnish with a few wolfberries before serving.
Spiced Stewed Tofu with Gamy Fish

Gamy fish, white pepper powder, green onion, ginger, garlic, cooking wine, tofu, salt, chili sauce, broad bean sauce, monosodium glutamate.
Method Steps
1. Clean the gamy fish, cut into large pieces, marinate with cooking wine and chili sauce.
2. Cut the tofu into blocks and season with salt, chop the green onion, slice the ginger, dice the red chili peppers.
3. Heat oil in a wok, add broad bean sauce to stir-fry until red oil appears, then add green onion, ginger, garlic, and chili peppers to stir-fry until fragrant.
4. Add one or two bowls of water, add fish pieces and tofu, bring to a boil.
5. Reduce heat to medium, simmer for around 20 minutes, season with a little salt, white pepper powder, and monosodium glutamate, sprinkle with green onion leaves before serving.
