Tianma Young Pigeon and Goji Berry Soup
Ingredients Preparation
Pigeon, salt, ginger, cooking wine, Tianma, goji berries, green onions.
Method Steps
1. Clean the pigeon, add cooking wine and ginger slices, then blanch in boiling water and rinse clean;
2. In a stew pot, add an adequate amount of cold water, ginger slices, Tianma, green onion sections, and the pigeon;
3. After bringing to a boil over high heat, reduce to low heat and slowly simmer until the pigeon is tender and falling apart, then sprinkle in the goji berries;
4. Add salt for seasoning, then simmer for another 15 minutes or so.
Tips
The time required to stew the pigeon until it is tender depends on the size and age of the pigeon; the older the pigeon, the longer the cooking time needed.
Houtou Young Pigeon and Goji Berry Soup
Ingredients Preparation
Young pigeon, houtou mushroom, water, warm water, chicken broth, ginger, green onion sections, rice wine, 20 grams of goji berries, 100 grams of meat slices, 5 grams of sugar, 800 ml of water, ginger and green onion, a small amount of salt.
Method Steps
1. Remove the base of the houtou mushroom, wash off any sand, and soak in water overnight. Use water around 40 degrees Celsius to knead and wash the houtou mushroom, changing the water several times;
2. Clean the pigeon, then blanch. Place the pigeon in a stew pot, then add the houtou mushroom, water, rice wine, ginger, and green onion and stew;
3. When the pigeon is almost cooked and tender, add the meat slices, then add the goji berries, sugar, and salt for seasoning. Cook until done and ready to serve.
Astragalus Young Pigeon and Goji Berry Soup

Astragalus, honey dates, young pigeon, goji berries, ginger slices, a small amount of salt.
Method Steps
1. Clean the young pigeon after slaughtering and remove the intestines and other innards. Blanch and clean thoroughly;
2. Wash the goji berries and astragalus and soak them for use. Wash the honey dates and remove the pits for later use;
3. Place the young pigeon, goji berries, astragalus, honey dates, and ginger slices in a clay pot, add an appropriate amount of water, and bring to a boil;
4. Then simmer over low heat for 2 hours. Finally, add salt for seasoning and serve.
