Steps

1. Clean the sardines and set aside. In a small bowl, mix dark soy sauce, sugar, cooking wine, vinegar, light soy sauce, and water to make a sauce.

2. Heat oil in a wok, add Sichuan pepper, star anise, and dried chili peppers, then add scallions, ginger, and garlic to stir-fry until fragrant.

3. Remove the spices, then pan-fry the fish on both sides. Pour in the prepared sauce and return the spices to the pan.

4. Simmer over medium-low heat until the fish is cooked through and the sauce thickens.

2. Add Lao Gan Ma spicy bean paste, oyster sauce, and sugar, stir-fry over medium heat.

3. After the aroma comes out, add the sardine fillets, a little bit of salt, and monosodium glutamate, stir-fry over high heat.

4. When evenly mixed, transfer to a plate and sprinkle with toasted sesame seeds.

Tips

A drizzle of honey can be added at the end.

Steps

3. Sprinkle with salt and sugar, add monosodium glutamate and white pepper, pour a little bit of oil, and add minced garlic, scallions, and ginger.

4. Cover with cling film and steam for 5 to 10 minutes in a steamer that has come to a boil.

The steaming depends on the heat and the amount of fish used.

Steps

1. Clean the sardines and leafy greens, rehydrate the mushrooms.
