Nereid

The Nereid, scientifically known as Sipunculus nudus, is a common coastal . It's a soft- animal that looks very much like an intestine, hence its common name, Nereid. Though it may not look appealing, its nutritional value is significant, containing protein, various amino acids, and it also has a decent taste.

Stir-Fried Nereids with Leeks

Ingredients Preparation

200 grams of nereids, 100 grams of leeks, 8 grams of salt, 5 grams of vinegar, 3 grams of monosodium glutamate, 10 grams of , 5 grams of garlic, 5 grams of soy sauce, 5 grams of wine, 20 grams of mixed with cornstarch, 5 grams of white pepper.

Method and Steps

1. Clean the nereids and cut them into segments; wash the leeks and cut them into segments, set aside.
2. Boil some water in a pot, blanch the nereids for 3 seconds, remove and rinse again.
3. In a small bowl, mix soy sauce, salt, white pepper, water mixed with cornstarch, monosodium glutamate, and to make a flavoring sauce.

Tips

When buying nereids, it's best to choose those with thick flesh.

Warm Tossed Nereids

300 grams of nereids, 20 grams of cilantro, 10 grams of garlic, 10 grams of vinegar, 5 grams of cooking wine, 1 gram of monosodium glutamate, 2 grams of salt, 5 grams of sesame oil, 5 grams of sugar.

Method and Steps

1. Choose nereids with thick flesh, clean them, and remove the blood water; cut them diagonally into segments.
2. Wash the cilantro and garlic heads, chop them finely. Bring water to a temperature of about 90 degrees Celsius in a pot.
3. Blanch the nereids briefly in the hot water, remove and cool down.
4. Mix in the vinegar, cooking wine, salt, sugar, monosodium glutamate, cilantro, and chopped garlic. Serve immediately after mixing .

Tips

Since this dish is almost eaten raw, it's important to clean the nereids thoroughly.

Scallion Oil Tossed Nereids

Appropriate amount of nereids, scallions, cilantro, salad oil, salt, vinegar, garlic, and sugar.

Method and Steps

1. Clean the nereids, remove the innards, clean them thoroughly, and cut them into sections.
2. Heat water in a pot to 80-90 degrees Celsius, blanch the nereids for 10 seconds, remove and cool down; drain the water.
3. Chop the white part of the scallion, shred the green part, crush the garlic into a paste, and cut the cilantro into sections.
4. Mix the crushed garlic, scallion shreds, and cilantro sections with the blanched nereids, add vinegar, salt, and sugar, mix well.
5. Heat oil in a pan, gently fry the white part of the scallion until fragrant and golden brown, remove and discard. Pour the scallion oil over the nereids and mix well.

Appropriate amount of nereids, garlic, ginger, salt, white pepper, sesame oil, , soy sauce.

Method and Steps

Clean the nereids, trim off both ends, remove the innards, and clean them thoroughly.
2. Bring water to a boil in a pot, blanch the nereids for 15 seconds, then cool them.
3. Cut the nereids into sections, crush the garlic, mix soy sauce, salt, white pepper, starch, sesame oil, and set aside.
4. Heat oil in a pan, stir-fry the minced garlic and ginger threads until fragrant, then pour in the vinegar and mix well. Pour this over the nereids.
5. Pour the prepared flavoring sauce over the nereids, mix and stir-fry evenly before serving.
