Mushroom and Chicken Soup with Tea Tree Mushrooms

A couple of days ago, I bought a chicken with the intention of making a Mushroom and with tea tree mushrooms. However, I had used up the remaining tea tree mushrooms in my last dish of stir-fried with tea tree mushrooms and green peppers. So, another trip to the supermarket to buy a pack of dried tea tree mushrooms. Thinking about the delicious soup I would make with them, the extra trip was worth it.

Method One for Mushroom and Chicken Soup with Tea Tree Mushrooms

Ingredients Preparation

One free-range chicken, a handful of tea tree mushrooms, an appropriate amount of ginger and scallions, salt, and cooking wine as needed.

Steps

1. Soak the tea tree mushrooms, clean them, and cut off the ends. Set aside a small amount of water they were soaked in for later use.
2. Tie the scallions into a knot and slice the ginger. Set aside.
3. Clean and prepare the chicken, then add it to a pot along with the scallions, ginger, and enough water to cover. Bring to a boil and skim off any foam that rises to the surface.
4. Add a little cooking wine and the tea tree mushrooms, along with the water they were soaked in.
5. After bringing it back to a boil, reduce the heat to low and simmer for one and a half hours. Season with salt before serving.

Ingredients Preparation

900 grams of chicken, 200 grams of tea tree mushrooms, an appropriate amount of ginger, and salt as needed.

Steps

1. Clean the chicken and cut it into pieces. Set aside.
2. In a pot, bring water to a boil. Blanch the chicken until it changes color, then remove and rinse.
3. Soak the tea tree mushrooms and slice the ginger. Set aside.
4. In a pot, add enough cold water to cover the chicken, ginger slices, and bring to a boil over high heat.
5. After boiling, reduce the heat to low and simmer for half an hour. Then add the tea tree mushrooms and continue simmering for another half hour or so.

Tips

Make sure to add enough water at the beginning, as you generally should not add more water during the cooking process.

Chicken, tea tree mushrooms, scallions, ginger, garlic, star anise, chopped scallions, dark soy sauce, and salt.

Steps

1. Clean the chicken and cut it into pieces. Set aside.
2. Heat in a pan, sauté the scallions, ginger, garlic, and star anise until fragrant. Add the chicken and stir-fry.
3. Once the chicken has rendered its fat, reduce the heat, add the soy sauce, and stir evenly.
4. Transfer the to a pressure cooker, add an appropriate amount of boiling water, and cook under pressure for 5 minutes.
5. Open the cooker, add the tea tree mushrooms, and cook uncovered for 5 minutes. Finally, garnish with chopped scallions and season with salt.
