How to Make Spicy Dry Pot Shrimp
Ingredients Preparation
Shrimp, potatoes, 1 large scallion, 1 green pepper, spicy sauce, dried chili peppers, ginger and garlic, and an appropriate amount of Sichuan peppercorns.
Steps
1. Chop the scallions and celery into segments, cut the dried chili peppers into pieces, and mince the ginger and garlic.
2. Remove the intestinal vein from the shrimp, wash them, and marinate them with salt, soy sauce, and cooking wine for a while.
3. Fry the cooked potatoes in oil until they resemble French fries.
4. Fry the shrimp in oil and then remove them.
5. Stir-fry all the vegetables except the potatoes in a pan and then remove them.
6. Heat up more oil in a pan, turn to low heat, add three tablespoons of chili sauce and stir-fry until fragrant, then add the dried chili peppers, minced ginger and garlic, and Sichuan peppercorns, and stir-fry evenly.
7. Add the potatoes, shrimp, and vegetables to the pan, stir-fry over high heat, and season with salt, monosodium glutamate, chicken powder, and soy sauce.
Homestyle Dry Pot Shrimp
Ingredients Preparation
500 grams of shrimp, a handful of celery, an appropriate amount of spicy peanuts, an appropriate amount of salad oil, 4 grams of salt, 1 scallion, 5 grams of garlic, a pinch of Sichuan peppercorns, 4 dried chili peppers, 2 potatoes, an appropriate amount of yellow bean sauce, an appropriate amount of fermented black bean sauce, and 1 tablespoon of fish sauce.
Steps
1. Peel and slice the potatoes, chop the scallion into segments, and slice the garlic.
2. Remove the heads, legs, and intestines from the shrimp, and then marinate them with salt for about 10 minutes.
3. Pour a little oil into a pan and add the potatoes, frying them on medium heat.
4. Drizzle a tablespoon of fish sauce over the potatoes, mix well, and when the potatoes are glossy and half-cooked, transfer them to a dry pot.
5. Add a little more oil to the pan, sauté the scallion segments, garlic, dried chili peppers, and Sichuan peppercorns, then add the yellow bean sauce and fermented black bean sauce and stir-fry until red oil appears.
6. Add the shrimp and stir-fry until they change color, drizzle a tablespoon of fish sauce over them, mix well, and then place the stir-fried shrimp on top of the potatoes in the dry pot, sprinkle with spicy peanuts.
7. Add the celery and light the fire under the pot.
Precautions for Shrimp
