600 grams pork belly, 25 grams light soy sauce, 20 grams dark soy sauce, 10 grams sugar, 10 grams salt, 15 grams rice wine, 2 star anise, ginger julienne, appropriate amount of Sichuan pepper, and cassia bark.
Method Steps
1. Wash the pork belly and drain it, then place it in a basin and add rice wine.
2. Add sugar, salt, ginger julienne, dark soy sauce, light soy sauce, star anise, Sichuan pepper, etc., mix well, cover, and refrigerate for 12 hours.
3. Thread the meat with string and hang it in a cool, ventilated area to air-dry for about 10 days.
How to Make Delicious Home-Style Cantonese-style Bacon
Ingredients Preparation
10 catties pork belly, appropriate amount of ginger, 2 liang salt, appropriate amount of light soy sauce, appropriate amount of chicken essence, 2 liang Fenjiu, 1 liang white granulated sugar.
Method Steps
1. Cut the pork belly into strips, wash and drain. Grind the ginger into a paste.
2. Mix all the seasonings in a large basin to make a brine, then immerse the pork belly and massage.
3. Place the soaked pork belly in a clay jar, pour in the remaining brine, cover, and refrigerate or store in a cool place for 48 hours.
4. Hang the cured pork belly on a hook and air-dry on the roof until dry.
How to Make Authentic Cantonese-style Bacon

10 catties pork belly, appropriate amount of Sichuan pepper, 125 ml salt, appropriate amount of star anise, 180 grams light soy sauce, 250 grams rock sugar, 150 grams dark soy sauce, 150 grams rice wine, appropriate amount of green onion, 1 appropriate amount of ginger.
Method Steps
1. Place the rock sugar in a basin, add refined salt, then add dark soy sauce and light soy sauce.
2. Add Sichuan pepper and star anise, mix well, then pour over the washed pork belly.
3. Add green onions and ginger, add strong rice wine, mix well, cover, and refrigerate for 48 hours, turning every 12 hours.
4. Afterwards, hang the cured bacon to air-dry for one to two weeks.
What Goes Well with Cantonese-style Bacon
Cantonese-style bacon is different from Sichuan-style bacon as it has a sweet flavor, similar to Cantonese-style sausages. Cantonese-style bacon can generally be stir-fried with cauliflower, garlic sprouts, green beans, dried bamboo shoots, and dried tofu. These combinations are all good choices. Additionally, bacon can be steamed together with some pumpkin or made into a clay pot rice dish, placed on top of the rice to steam. This way, the rice will be infused with the oil and the aroma of the bacon.
