Skinless fish has many names, and some people may not have heard of it. It is also called horseface croaker, horsehead tilefish, or rat fish. Large ones look very much like a horse's face, while smaller ones resemble rats, hence the name. Generally, when purchased frozen, they are headless.
How to Make Braised Skinless Fish
Ingredients:
Skinless fish, shiitake mushrooms, green onions, ginger, dried chili peppers, soy sauce, oyster sauce, cooking wine, chili sauce (in appropriate amounts).
Steps:
1. Cut off the tail and fins of the skinless fish, drain the water, add salt, soy sauce, and cooking wine for 20 minutes of marination;
2. Heat oil in a pan until about 60% hot, then fry the marinated skinless fish until the surface turns golden brown, then remove;

How to Make Sweet and Sour Skinless Fish
Ingredients:
Skinless fish (in appropriate amount), ginger slices, green onions, cooking wine, sugar, vinegar, dark soy sauce, light soy sauce, white pepper powder, water.
Steps:
1. In a small bowl, mix sugar, vinegar, cooking wine, dark soy sauce, light soy sauce, white pepper powder, and water. Clean the skinless fish and make crosswise incisions on it;
2. Heat a little oil in a pan, add ginger slices, once they change color, add the skinless fish;
3. Switch to medium-low heat, fry until both sides turn golden brown, then pour in the mixed sauce, heat over high heat, switch to low heat, and flip the fish;
4. After a short while, add chicken essence, flip the fish again, simmer until the sauce thickens, sprinkle with chopped green onions, then serve.
Tips:
Avoid selecting too large skinless fish.
How to Make Dry-Fried Skinless Fish
Ingredients:
3 skinless fish, green onions, ginger, garlic (in appropriate amounts), soy sauce, cooking wine, five-spice powder, chicken essence, sugar (in appropriate amounts), a little tomato sauce.
Steps:
1. Clean the skinless fish, cut off the surrounding fins, and make several slashes;
2. Then add an appropriate amount of green onions, ginger, garlic, cooking wine, soy sauce, five-spice powder, and chicken essence, marinate for half an hour;
3. Heat a lot of oil in a pan, evenly coat both sides of the skinless fish with starch, place them in the pot, and fry over medium heat;

How to Boil Skinless Fish
Ingredients:
3 skinless fish, salt, green onions, ginger, a little oil.
Steps:
1. Remove the skin of the skinless fish, clean it thoroughly, rinse and set aside;
