Pattypan squash, also known as summer squash, pot marrow, and Japanese pumpkin, is essentially the plump squash from the game Plants vs. Zombies. There are many ways to cook pattypan squash: you can stir-fry it, stuff it in dumplings, and if it gets a bit old, you can make porridge with it, much like how you would cook pumpkins. Pattypan squash is sweet but low in sugar, making it perfect for those who are afraid of gaining weight or have diabetes.
Pattypan Squash and Shrimp Dumplings
Ingredients
Main Ingredients: 600g pattypan squash, 150g shrimp, 600g wheat flour. Additional Ingredients: oil, salt, soy sauce, monosodium glutamate (MSG), sesame oil, scallions, ginger.
Preparation Method
1. Knead the wheat flour into dough and let it rest. Peel the pattypan squash, remove the seeds, wash it, and grate it. Sprinkle a little salt over it, mix well, and let it sit for about 10 minutes to draw out the moisture. Squeeze out the excess water from the grated squash.
2. Peel the shrimp and remove the intestinal tract, then mix with oil, soy sauce, MSG, chopped scallions, and ginger.
3. Combine the pattypan squash and shrimp, add an appropriate amount of salt and sesame oil, mix well, and the filling is ready.
4. Pinch the rested dough into evenly sized balls, roll them out into round wrappers, place the filling on one side of the wrapper, fold the other side over, and seal the edges tightly.
5. Coat an electric pan with a layer of oil, place the dumplings in it, cover, and fry for 5-10 minutes.
Pattypan Squash and Egg Pancakes
Ingredients
Main Ingredients: 200g pattypan squash. Additional Ingredients: 10g oil, 3g salt, 2 eggs, 10g dried shrimp.
Preparation Method
1. Grate the washed pattypan squash and put it in a bowl. Add three tablespoons of flour, mix well, and let it sit for a while.
2. Crack two eggs into the mixture, add an appropriate amount of dried shrimp, scallions, and salt. Stir in 50ml of water until the batter is smooth.
3. Heat an electric pan, coat it with a layer of oil, spread the batter evenly, and fry until golden brown on both sides.
Pork Ribs Stewed with Pattypan Squash
Ingredients
Main Ingredients: 800g pork ribs, 500g pattypan squash. Additional Ingredients: oil, salt, 10g green onions, 25g cilantro, five-spice powder, ginger, 2 star anise, soy sauce, chicken essence.
Preparation Method
1. Soak the pork ribs to remove blood, blanch in boiling water, rinse, and set aside. Clean the pattypan squash, remove the seeds, cut into appropriately sized triangular pieces, slice the green onions, chop the ginger, and cut the cilantro into segments.
2. Heat one tablespoon of oil in a pot, add the star anise and ginger to fry until fragrant, then add the green onions to further enhance the aroma.
3. Stir-fry the pork ribs, pour in an appropriate amount of soy sauce to color them, then add the pattypan squash pieces and continue to stir-fry.
4. Pour in enough water so that it reaches the level of the ingredients, bring to a boil over high heat, then simmer over low heat for about half an hour.
5. Finally, thicken the sauce over high heat, add chicken essence and cilantro, mix well, and serve.
