Cooking Method
1. Wash the pork and cut into shreds, then mix with cooking wine, soy sauce, refined salt, white pepper powder and marinate; wash the winter bamboo shoots and dried mushrooms and cut them into shreds; wash the Chinese rape and cut into sections.
2. Fill a pot with water and bring to a boil. Add the noodles and cook until done. Remove and rinse under cold water to drain. Fry in hot oil and set aside on a plate.
3. In a wok, heat oil over high heat, add the pork shreds, winter bamboo shoots, and mushroom shreds, and stir-fry. Add broth and bring to a boil. Thicken with wet starch, drizzle with sesame oil, pour over the noodles and mix well before serving.
How to Avoid Sticking While Stir-Frying Noodles
1. To avoid sticking during stir-frying, rinse the cooked noodles with cold water, or simply rinse under running tap water. This makes it easier to separate the noodles when stir-frying, preventing them from sticking to the pan or clumping together.
2. Since the noodles are already cooked, they should be stir-fried over high heat to ensure they are thoroughly and evenly cooked with flavor.
3. To prevent sticking, heat the pan before adding oil and ingredients for stir-frying.
How to Make Seafood Fried Noodles
Ingredients
200 grams of noodles, 10 grams of fish balls, shrimp, and crab meat each, 1 egg, 5 grams of wood ear fungus and broccoli. Vegetable oil, salt, soy sauce, and monosodium glutamate as needed.
Cooking Method
1. Wash the wood ear fungus and broccoli. Boil water in a pot, add the noodles and cook until done. Remove and set aside.
2. Separate the egg whites from the yolk. Dip the shrimp in the egg white and season with a little salt. Marinate and set aside.
3. Heat a small amount of oil in a frying pan. Add the marinated shrimp, followed by the crab meat, fish balls, wood ear fungus, and broccoli.

Cooking Method
1. Remove the tough fibers from the snow peas; wash the mushrooms and cut them in half; wash the green onion and cut into sections; slice the ginger; clean the shrimp and make an incision along the back, then mix with a little starch; slice the char siu and set aside.
2. Clean the sea cucumber inside and out, then place in a pot with water, cooking wine, and a little green onion and ginger. Boil for 5 minutes, remove, cut in half lengthwise, and slice diagonally.
3. Heat oil in a wok, sauté the green onion, then add the mushrooms, sea cucumber, and noodles to stir-fry. Add cooking wine, salt, white pepper powder, and starch and cook until done. Finally, add the shrimp, snow peas, and char siu and stir-fry until evenly mixed.
