Stir-Fried Squid with Leek Stalks
Ingredients:
Squid, leek stalks, salt, sugar, cooking wine, chicken essence, red chili peppers, pepper, ginger.
Method:
1. Wash the leek stalks and cut them into sections. Clean the squid and remove impurities, then cut it into flower patterns.
2. Blanch the squid in boiling water for 30 seconds, scoop out, and dip in cold water briefly before scooping out again.
3. Heat oil in a pan, add ginger threads to stir-fry until fragrant, then add the squid and a little cooking wine to stir-fry.
4. Add the leek stalks and continue stir-frying. Once the leek stalks wilt, add salt, sugar, pepper, chicken essence, and stir well. Add some red chili peppers and it's ready to serve.
Tips:
After blanching the squid in boiling water, dip it in cold water for a crispier texture.
Stir-Fried Squid with Green and Red Peppers
Ingredients:
Squid, large green bell peppers, small red lantern peppers, ginger, garlic, oil, salt, cooking wine, soy sauce.
Method:
1. Remove the reddish-brown skin from the squid.
2. Cut the squid open, take out the spine-like bone, white membrane, and all internal organs.
3. With the inside facing outward, make diagonal cuts at a 45-degree angle, spaced 3 millimeters apart. After cutting, make another set of diagonal cuts perpendicular to the first ones, also spaced 3 millimeters apart.
4. Cut the scored squid into pieces and place in a dish.
5. Bring water to a boil in a pot, add the squid pieces to quickly blanch. Remove immediately when they curl up, then immerse in ice water. Drain the squid after soaking.
6. Heat oil in a wok, sauté ginger and garlic until fragrant, then add the peppers and stir-fry, adding a little salt.
7. Add the drained squid and quickly stir-fry. Add a small spoonful of cooking wine and an appropriate amount of soy sauce for flavor before serving.
Saucy Stir-Fried Squid
Ingredients:
Fresh squid tentacles, onions, scallions, spicy sauce, garlic, ginger, salt, sugar, Shaoxing wine, chicken essence.
Method:
1. Cut the onions into strips and finely chop the scallions and garlic.
2. Remove the film from the cleaned squid tentacles, cut into sections, and marinate with salt, pepper, and Shaoxing wine.
3. Heat a little oil in a wok over medium heat, add scallion and ginger to stir-fry until fragrant.
4. Then add the onion strips and stir-fry until fragrant. Add the squid and stir-fry over high heat until aromatic.
5. Continue stir-frying until the squid becomes soft and changes color, then add 2-3 tablespoons of spicy sauce and stir quickly to combine.
6. Add 1 tablespoon of sugar and 1 tablespoon of chicken essence, stir quickly and evenly. Add chopped scallions and 2 small spoons of soy sauce for seasoning, mix well, and serve.
Squid Stir-Fried with Ginger and Garlic
Ingredients:
Squid, ginger, garlic, soy sauce, sugar, oil, salt.
Method:
1. Clean the squid and cut along the middle line, then score it with a crosshatch pattern.
2. Cut the scored squid into pieces and blanch in boiling water, then scoop out and cool, drain.
3. Heat oil in a pan, add minced ginger and garlic to stir-fry until fragrant, then pour in soy sauce and sugar.
4. Once the sugar is dissolved, add the squid, stir-fry evenly, and season with salt before serving.
Tips:
When blanching, scoop out the squid as soon as it curls. When stir-frying squid, do so quickly and for a short time.
