Olive vegetable is a delicacy from the Chaoshan region, primarily made from mustard greens pickled in olive juice. When properly preserved, it can last for several months and serves as an appetizer that aids digestion. There are various ways to enjoy olive vegetable: it can be stir-fried with other ingredients, used in stews, or even incorporated into making small snacks.
Olive Vegetable Steamed Fish
Ingredients:
Sea bream, olive vegetable, salad oil, salt, scallions, ginger, cooking wine, light soy sauce, red chili peppers, sugar, white pepper.
Steps:
1. Clean and prepare the sea bream; make a few incisions on both sides of the fish, then evenly apply salt, white pepper, and cooking wine.
2. Rub the seasonings into the fish and the incisions, and let it marinate for 10-15 minutes.
3. Wash all the ingredients, slice the ginger into thin strips, mince the chili peppers and scallions, and place ginger strips inside and on top of the fish.
4. Apply light soy sauce and sugar over the fish, then sprinkle olive vegetable and chili peppers on top.
5. Place the fish in a microwave-safe dish and steam for 4-5 minutes. Once cooked, sprinkle minced scallions on top of the fish.
6. In a separate pan, heat salad oil until very hot, then pour it over the fish. Serve immediately.
Olive Vegetable Minced Pork with Green Beans
Ingredients:
Green beans, ground pork, olive vegetable, red chili peppers, salad oil, salt, ginger, garlic, cooking wine, light soy sauce, cornstarch.
Steps:
1. Wash all the ingredients, crush the garlic, and mince it; slice the chili peppers into rings.
2. Trim the ends and strings off the green beans, then cut them diagonally into smaller pieces; mince the ginger.
3. Chop the pork into minced meat, add minced ginger, light soy sauce, cooking wine, and cornstarch, then marinate.
4. Heat salad oil in a wok, add green beans and stir-fry until they start to wrinkle and brown slightly. Set aside.
5. Sauté minced garlic until fragrant, add ground pork and stir with chopsticks to break up the clumps. Add chili peppers and stir-fried green beans.
6. Increase the heat, add a large spoonful of olive vegetable, stir well, and serve.
Olive Vegetable Stir-Fried Water Chestnuts
Ingredients:
Olive vegetable, water chestnuts, dried shrimp, salt, garlic, vegetable oil.
Steps:
1. Rinse the water chestnuts, remove the leaves and outer skin, and rinse again thoroughly.
2. Slice the prepared water chestnuts into thin strips; crush and mince the garlic and set aside.
3. Soak the shrimp in advance for 3 hours until soft. Rinse any remaining shells to ensure better texture.
4. Heat vegetable oil in a pan, add minced garlic to release its fragrance, then add water chestnut strips and stir-fry until half-cooked.
5. Add the shrimp and continue stir-frying until cooked and fragrant. Add olive vegetable and stir well. Finally, season with salt before serving.
