Delicious Clam Soup

Half a kilogram of clams, 150 grams of tofu, six mushrooms, four button mushrooms, 50 grams of white radish, an appropriate amount of scallions and ginger, 15 grams of cooking wine, a little white pepper, a little salt and chicken essence, an appropriate amount of sesame oil, and an appropriate amount of chopped garlic chives.
Method Steps
1. Cut the tofu into small cubes and soak them in lightly salted water. Slice the mushrooms and button mushrooms and blanch them in boiling water for later use.
2. Add an appropriate amount of scallions, ginger, and water to a pot and bring it to a boil. Then add the cleaned clams and cook until they open. Turn off the heat.
3. Filter the clam broth into a casserole pot, add cooking wine, white radish, mushrooms, and button mushrooms.
4. Then add scallion sections and ginger slices and simmer until the radish becomes translucent. Afterwards, add the tofu and cook for five minutes.
5. Add the clams and continue cooking. After boiling, skim off any foam, season with salt, add white pepper and chicken essence, then add chopped garlic chives and drizzle with sesame oil.

Kimchi Clam Soup

White clams, northern tofu, button mushrooms, spicy kimchi, onion, lettuce, zucchini, roasted sesame seeds, green onions, ginger, salt, sugar, oil, and an appropriate amount of water.
Method Steps
1. Soak the clams in advance for half a day and add an appropriate amount of oil to make them spit out all the sand.
2. Slice the button mushrooms, tofu, and zucchini. Cut the onion into strips and set aside.
3. Boil water in a pot, add salt, and add the tofu cubes, simmering over low heat.
4. After five minutes, add the button mushrooms and continue simmering. In another frying pan, sauté the onion strips in a little oil.
5. Then add the spicy kimchi and stir-fry for two minutes. Pour the cooked vegetables into the tofu pot and cook together.
6. Once boiling again, add the zucchini slices, and season with salt and sugar. Add the clams and switch to medium heat.
7. Then add the lettuce. Once the clams open, sprinkle with roasted sesame seeds before serving.
Cauliflower Clam Soup

1. Wash the cauliflower and broccoli and soak them in saltwater. Clean the clam meat and wash the tomatoes, peel them, and cut them into blocks.
2. Heat oil in a pot, stir-fry scallions and ginger, then add broccoli, cauliflower, clam meat, and tomatoes.
3. Pour in concentrated chicken stock, add an appropriate amount of water, flavor juice, salt, and tomato sauce, and cook for about 20 minutes.
