How to make Braised Chicken with Dried Mushrooms
Ingredients
1 pound of Three-Yellow chicken, 6 dried mushrooms, an appropriate amount of wood ear fungus, dried day lilies, and a suitable amount of scallions, ginger, and garlic
Instructions
1. Clean the chicken pieces, drain them, then marinate them in 1 tablespoon of oil, 1 tablespoon of cooking wine, 5 grams of salt, and 5 grams of starch for half an hour;
2. Soak the dried mushrooms, wood ear fungus, and dried day lilies in water until they are rehydrated. Squeeze out the excess water and stir-fry them for about 3 minutes to dry them;
3. Heat oil in a wok, add the scallions, ginger, and garlic to sauté until fragrant, then add the chicken pieces and stir-fry evenly;
4. Add soy sauce, salt, sugar, and pour in a bowl of water. Cover the pot and simmer for 10 minutes;
5. Then add the dried mushrooms, wood ear fungus, and day lilies, stir evenly, and add a little water if needed;

Home-Style Braised Chicken with Dried Mushrooms
Ingredients
1 whole chicken, 10 dried mushrooms, ginger slices, garlic cloves, 2 tablespoons of oyster sauce, 1 teaspoon of light soy sauce, 1 teaspoon of sugar, 1 teaspoon of dark soy sauce, 1 large tablespoon of corn oil, half a bowl of Shaoxing wine.
Instructions
1. Soak the dried mushrooms in water, clean them, and cut them into halves for later use;
2. Clean the chicken, cut it into pieces, then marinate it with a small amount of Shaoxing wine and salt for a while;
3. Heat oil in a wok, sauté the ginger and scallions until fragrant, then add the chicken pieces and stir-fry until the color changes;
4. Add the dried mushrooms, stir-fry evenly, then add the oyster sauce, light soy sauce, dark soy sauce, Shaoxing wine, and sugar. Bring to a boil;

Cantonese-Style Braised Chicken with Dried Mushrooms
Ingredients
Half a chicken, 15 grams of dried mushrooms, scallions and ginger, salt, sugar, cornstarch, light soy sauce, white pepper, and oil.
Instructions
1. Clean the chicken, cut it into pieces, then mix in an appropriate amount of salt, white sugar, cornstarch, light soy sauce, and white pepper. Marinate for about 20 minutes;
2. Clean the dried mushrooms and soak them in warm water until softened. Remove them from the water and set aside the soaking water;
3. Slice the ginger and cut the green parts of the scallions into segments, and the white parts into rings;
4. Heat oil in a wok, add the ginger slices and scallion segments to sauté until fragrant, then add the chicken pieces and stir-fry over high heat for 2 minutes until golden brown;
5. Add the dried mushrooms and the marinade ingredients, stir-fry evenly, then add the soaking water (enough to cover one-third of the chicken pieces);
6. Bring to a boil over high heat, then simmer on medium-low heat for 8 minutes until the chicken is cooked through. Garnish with scallion rings and thicken the sauce before serving.
