Method

Method
1. Cut the chicken into pieces, rinse them under cold water, and blanch them in boiling water;
2. Remove the chicken and place it in a plate. Clean the shiitake mushrooms and blanch them in boiling water for 4 minutes before removing them;
3. Heat a wok and add soybean oil, then add green onions and ginger and stir-fry until fragrant. Drain the chicken and add it to the wok to sear briefly;
4. Add soy sauce, then pour in an appropriate amount of water, white wine, Sichuan pepper, rice vinegar, and bay leaves. Finally, add sugar and salt and mix well;

Method
1. Soak the porcini mushrooms in cold water until they are rehydrated, drain and set aside. Prepare the chicken by cutting it into pieces and set aside;
2. Blanch the chicken pieces in cold water, bring to a boil and simmer for 5 minutes, then rinse and set aside. Slice the scallions, ginger, and garlic and set aside;
3. Soak the sweet potato vermicelli in boiling water for 3 minutes, then rinse and set aside;
4. Heat oil in a pan, add scallions, ginger, garlic, Sichuan pepper powder, and red chilies and stir-fry until fragrant. Then add the chicken and stir-fry;
5. Add Sichuan pepper powder, Sichuan pepper, soy sauce, bay leaves, vinegar, and cumin and stir-fry;
6. Stir-fry until the mixture turns golden yellow, then add the mushrooms and enough water to cover the ingredients. Add salt and cook until tender. Add the vermicelli and simmer over low heat until done.
Tips
If you don't have porcini mushrooms, you can use other types of mushrooms. Dried mushrooms generally need to be soaked for 10 hours.
