A while back, when I went to have lunch at a place nearby, I saw a dish of green peppers and some kind of mushrooms stir-fried with meat. It tasted pretty good, so when I got home, I tried to find out what type of mushroom it was. After looking up different kinds like oyster mushrooms and chicken thigh mushrooms, none seemed to match. Eventually, I figured it was tea tree mushrooms. Luckily, I had some dried tea tree mushrooms left over from making soup at home, so I soaked them and made a dish of stir-fried tea tree mushrooms with meat. The taste was quite nice.
Method One for Stir-Fried Tea Tree Mushrooms with Meat
Ingredients Preparation
500g tea tree mushrooms, 100g sliced pork, 2g salt, 3ml soy sauce, 2g sugar, 3g starch, and an appropriate amount of oil.
Steps
1. Trim the tough roots off the tea tree mushrooms and thoroughly wash them. Set aside.
2. Wash the pork and slice it thinly. Marinate the pork slices with a small amount of starch, salt, and sugar for 20 minutes.
3. In a hot wok with oil, stir-fry the marinated pork slices over high heat until they are cooked through. Remove and set aside.
4. Add the tea tree mushrooms to the wok and continue stir-frying over high heat until they become slightly tender.
5. Return the cooked pork slices to the wok. Add salt, sugar, and soy sauce, adjust the seasoning, and serve.
Method Two for Stir-Fried Tea Tree Mushrooms with Meat
Ingredients Preparation
300g fresh tea tree mushrooms, 50g pork belly, 6g shredded dried chili peppers, 20 Sichuan pepper berries, 5g ginger, 2 garlic cloves, an appropriate amount of black sesame seeds, 15g spicy bean paste, 3g salt, 3ml dark soy sauce, 3g sugar, 3ml sesame oil.
Steps
1. Clean the tea tree mushrooms and trim off the tough roots. Soak them in lightly salted water for a moment. Slice the pork belly into pieces 0.3cm thick.
2. After soaking, rinse the tea tree mushrooms under running water and drain. Break them into sections by hand.
3. Boil water in a pot and blanch the tea tree mushrooms until the water boils again. Drain and set aside.
4. Heat oil in a wok over low heat. Fry the chopped spicy bean paste until it turns red. Add the sliced ginger, garlic, Sichuan pepper, and dried chili pepper shreds and stir-fry until fragrant.
5. Add the pork belly slices and stir-fry over medium-high heat until the meat changes color. Then add the tea tree mushrooms and stir-fry until they are cooked through. Season with salt and sugar. Add dark soy sauce for color.
6. Finally, drizzle with sesame oil and sprinkle with black sesame seeds. Serve on a plate.
Tips
Before cooking fresh tea tree mushrooms, rinse them under running water and then soak them in lightly salted water. This helps remove any peculiar odors or impurities and enhances their toughness.
Method Three for Stir-Fried Tea Tree Mushrooms with Meat
Ingredients Preparation
An appropriate amount of dried tea tree mushrooms, pork, green peppers, Thai bird's eye chilies, spicy bean paste, salt, monosodium glutamate, and oil.
Steps
1. Soak the tea tree mushrooms thoroughly, clean them, and cut them into sections. Set aside.
2. Cut the green peppers and Thai bird's eye chilies into diagonal segments. Wash the pork and cut it into thin strips.
3. Heat oil in a wok and stir-fry the spicy bean paste until fragrant. Then add the pork and stir-fry until it changes color.
4. Add the tea tree mushrooms and stir-fry until they are cooked through. Then add the green peppers and Thai bird's eye chilies and stir-fry evenly.
5. Season with salt and monosodium glutamate and serve.
