Generally, when you buy dried kelp, you purchase it by the sheet or in larger quantities. However, a single sheet of kelp yields quite a bit once it's soaked. We've previously introduced stir-fried kelp, but what do you do with the leftovers? Making Kelp, Mung Bean, and Pork Rib Soup is a great choice as it's refreshing and nutritious.
How to Make Kelp, Mung Bean, and Pork Rib Soup
Ingredients:
500 grams pork ribs, half a sheet of kelp, 5 grams salt, a little ginger, a little scallion.
Instructions:
1. Soak the kelp overnight, and also soak the mung beans for about 2 hours.
2. Clean the pork ribs and blanch them; then rinse off the scum.
3. Place the pork ribs and old ginger in a stew pot with water, and bring to a boil over high heat.
4. Reduce the heat to low and simmer until the pork ribs are halfway cooked, then add the sliced kelp and mung beans.
5. Continue simmering until the kelp is tender and the mung beans have burst open, then season with salt.
Homestyle Kelp, Mung Bean, and Pork Rib Soup
Ingredients:
250 grams spareribs, 2 kelp strips, 50 grams mung beans, an appropriate amount of ginger, salt, cooking wine, and oil.
Instructions:
1. Rinse the pork ribs and place them in cold water to cook and remove impurities and excess fat.
2. Remove the blanched pork ribs and wash them; slice the ginger into thin strips and cut the soaked kelp into pieces.
3. Heat a small amount of oil in a wok, add some ginger strips and stir-fry until fragrant, then add the kelp and stir-fry until fragrant.
4. Add the pork ribs and stir-fry until fragrant, then transfer to a pressure cooker and add hot water or boiling water.
5. Add the mung beans, cooking wine, and salt, bring to a boil over high heat for 15 minutes until the pressure builds, then reduce the heat and cook under pressure for 20 minutes.
Tips:
The kelp and mung beans should be soaked in advance.
