Method Steps

1. Remove the intestinal vein from the shrimp, clean them thoroughly, and set aside.

2. Wash the cucumber and into strips. Chop the scallions into sections, slice the ginger, flatten and peel the garlic, and rinse the soybean sprouts; set aside.

3. Remove the leaves from the celery, cut the stalks into long strips, blanch them in boiling water, then cool down.

4. Heat enough oil in a wok. Once hot, add the prepared shrimp and fry.

5. When the shrimp turn golden and crispy, remove them, drain off the oil, and set aside.

6. Leave some oil in the pan, add Sichuan peppercorns and star anise, stir-fry until fragrant, then add the doubanjiang and stir-fry until red oil appears.

7. Add the scallions, ginger, and garlic, stir-fry, then add the soybean sprouts and stir-fry until cooked through. Add the celery.

8. Return the shrimp to the pan, finally add the cucumber, and stir-fry until cooked.

Black tiger shrimp, light soy sauce, vinegar, sugar, cornstarch, ginger slices, scallion threads, cooking wine, olive oil, salt.

Method Steps

1. Clean the shrimp, removing the whiskers, legs, rostrum, and intestinal veins.

2. Add a moderate amount of cooking wine, mix well, and marinate for 10 minutes.

3. In a small bowl, mix light soy sauce, vinegar, cornstarch, sugar, and water to make a slurry.

4. Heat enough oil in a wok. Once hot, add the shrimp and fry until they turn red, then remove and set aside.

5. Leave some oil in the pan, add ginger slices and scallion threads, and stir-fry briefly to release their fragrance.

2. Mix olive oil, lemon juice, parsley, garlic, and black pepper in a large bowl. Add the shrimp, mix well so that they are coated with the seasonings, refrigerate for 30 minutes.
