Method Steps
1. Remove the black parts inside the grassy carp you bought. Cut the coriander into medium-sized pieces. Take an appropriate amount of ginger and cut it into thin threads. Cut the remaining ginger into thin slices for later use. Chop the garlic cloves.
2. Heat the pan until very hot, add shrimp oil, and fry the ginger slices. Remove and discard them afterward.
3. Pat the grassy carp dry before frying it. Once the bottom of the fish produces fewer oil bubbles, gently move the spatula to flip it. When the other side turns golden, pour half a bowl of water, add soy sauce, ginger threads, and garlic. Cover and simmer until the sauce thickens.
